No, Opero Documents only works with Google Docs format at this time. However, you can make the Google Doc look like a Google Sheet or Excel by changing the Page Setup to Landscape rather than Portrait. And you can insert a table into doc with multiple rows to create the same look.
Yes you can use Opero Documents with Salesforce mobile. Make sure you drag the custom button onto Mobile & Lightning Actions when modifying your object page layout.

Is it possible to merge watermarks into a Google Doc?
No you cannot add a watermark to a Google Doc. If you can add the image in the corner and don’t need the text to overlay over the image, then you can just have the image on the doc somewhere. If you need something like “Draft” you can put in the heading/title. Or create a table with a narrow column on left or right with an image of the watermark that runs along the side of the page.
Security should not be a concern with using Google Docs platform. You can restrict the access of any template or your Google Drive folder where templates are being stored, see this article for more detail.

If using Lightning Experience, you will need to go to “Salesforce Mobile & Lightning Experience Actions” section when modifying your page layout and drag the action button onto page layout from there. Then you will be able to find your custom button on the drop down arrow next to the other standard buttons when using Lightning Experience.
When you get an error message, it usually refers to a specific field in your template or general issue which helps you troubleshoot. If you get an error message and not sure where it is coming from, it helps to clone the document action/google doc template and paste one field at a time, then test generating document until you can find which field(s) are causing the error message. Then you can focus on that field and better be able to figure it out.
There is no SUM operator feature with Opero Documents app. In order to sum child records in Salesforce, you need to use Rollup summary field for Master-Detail relationship Objects. If you want to sum up child records related through Lookup relationship, then the easiest way would be to use Lookup Rollup Summary 3rd party App: https://github.com/afawcett/declarative-lookup-rollup-summaries.
FYI this app will not work if using Professional Edition. Another option for rollup summary app if using Professional Edition is “Rollup Helper” you can find on AppExchange.
